I love baking these chewy oatmeal raisin cookies as they bring a nostalgic comfort to our family evenings.
Ingredients
- Dry Ingredients: 1 cup (130 g) all-purpose flour, 1 1/2 cups (135 g) old-fashioned rolled oats, 1/2 tsp baking soda, 1/2 tsp ground cinnamon, 1/4 tsp salt
- Wet Ingredients: 1/2 cup (115 g) unsalted butter melted and slightly cooled, 3/4 cup (150 g) light brown sugar packed, 1/4 cup (50 g) granulated sugar, 1 large egg, 2 tsp vanilla extract
- Add-ins: 1 cup (150 g) raisins
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C) Line a baking sheet with parchment paper
- Mix Sugars and Butter:
- In a large bowl whisk together the melted butter brown sugar and granulated sugar until smooth
- Add Eggs and Vanilla:
- Add the egg and vanilla extract whisking until fully combined
- Combine Dry Ingredients:
- Stir in the flour oats baking soda cinnamon and salt until just incorporated
- Add Raisins:
- Fold in the raisins with a spatula
- Form Cookies:
- Scoop heaping tablespoons of dough onto the prepared baking sheet spacing about 2 inches apart
- Bake:
- Bake for 10 12 minutes or until the edges are golden and the centers look just set
- Cool:
- Let cookies cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely
