Prepare the crust:
In a large bowl whisk together all-purpose flour almond flour sugar and salt. Add cold butter and use a pastry cutter or fingertips to work into the flour until the mixture resembles coarse crumbs.
Mix egg yolk and water:
In a small bowl whisk the egg yolk with 3 tbsp ice water. Drizzle over the flour mixture and stir until the dough just comes together adding extra water as needed. Shape into a disk wrap and chill for at least 30 minutes.
Preheat oven:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare filling:
In a bowl toss sliced plums with clover honey sugar cornstarch vanilla cinnamon and a pinch of salt.
Roll dough:
Roll out the dough on a lightly floured surface into a 12-inch (30 cm) circle. Transfer to the prepared baking sheet.
Assemble galette:
Arrange the plum mixture in the center of the dough leaving a 2-inch (5 cm) border. Gently fold the edges over the fruit pleating as you go.
Egg wash:
Brush the crust with beaten egg and sprinkle with turbinado sugar.
Bake:
Bake for 35–40 minutes or until the crust is golden and the fruit is bubbling.
