# What You Need:

→ Tortilla Base

01 - 2 large flour tortillas (10-inch diameter)

→ Sauce

02 - 4 tbsp pizza sauce or tomato passata
03 - 1 tsp olive oil (optional, for brushing)

→ Cheese

04 - 1 cup shredded mozzarella cheese

→ Toppings

05 - 1/3 cup sliced pepperoni or vegetarian alternative (optional)
06 - 1/4 red bell pepper, thinly sliced
07 - 1/4 small red onion, thinly sliced
08 - 4 black olives, sliced
09 - 1/2 tsp dried oregano
10 - Fresh basil leaves (optional, for garnish)

# Steps:

01 - Place a tortilla on a clean surface. Cut a single straight line from the center to the edge using a knife or scissors.
02 - Spread 2 tbsp pizza sauce evenly over the tortilla, leaving a 1/4-inch border around the edges.
03 - Sprinkle 1/2 cup mozzarella cheese evenly across the tortilla surface.
04 - Distribute half of the pepperoni (if using), bell pepper, red onion, and olives in separate quarters. Sprinkle with a pinch of dried oregano.
05 - Starting from the cut edge, fold each quarter over the next to create a layered, triangle-shaped wrap.
06 - Repeat steps 1 through 5 for the second tortilla.
07 - Heat a non-stick skillet over medium heat. Brush lightly with olive oil if desired.
08 - Place folded wraps seam-side down in the skillet. Cook for 3 to 4 minutes per side, pressing gently with a spatula, until golden and crispy with melted cheese.
09 - Remove from pan and let cool briefly. Garnish with fresh basil if desired. Slice in half and serve hot.

# Expert Advice:

01 -
  • The tortilla fold technique creates distinct layers where each bite gives you the perfect ratio of crispy exterior to gooey cheese interior.
  • You can prepare these in less time than it takes to preheat an oven, making them perfect for those nights when hunger strikes and patience wanes.
02 -
  • That radius cut from center to edge is absolutely crucial - when I tried making these without it, the tortilla wouldnt fold properly and everything fell apart in the pan.
  • Medium heat is your friend - too high and youll burn the tortilla before the cheese melts, too low and youll never get that satisfying crispness.
03 -
  • If your tortilla tears during folding, dont panic - place it in the pan tear-side down first and the melting cheese will help seal the break.
  • For extra crispy results, brush the outside of the tortilla with a tiny amount of olive oil or melted butter before placing it in the pan.
