# Steps:
01 - Set oven to 350°F and line a large baking sheet with parchment paper.
02 - In a large bowl, whisk together flour, sugar, baking powder, and salt until evenly distributed.
03 - In a separate bowl, beat eggs, vanilla extract, almond extract, and vegetable oil until smooth and homogenous.
04 - Add wet mixture to dry ingredients and stir gently until just combined, avoiding overmixing.
05 - Fold in toasted almonds and chocolate chips if using, ensuring even distribution.
06 - Divide dough in half; on prepared baking sheet, shape each into a log approximately 10 inches long and 2 inches wide, flattening slightly.
07 - Bake logs for 18 to 20 minutes until set and lightly golden. Remove and allow to cool for 10 minutes.
08 - Reduce oven temperature to 300°F to prepare for slicing and second bake.
