- Mint Sauce: 1 cup fresh mint leaves coarsely chopped, ¼ cup fresh flat-leaf parsley chopped, 1 small shallot minced, 2 tablespoons red wine vinegar, 2 teaspoons honey, ⅓ cup extra virgin olive oil, salt and pepper to taste

- Add the lamb chops in a single layer (work in batches if needed). Sear for 3 4 minutes per side for medium-rare or until desired doneness. Transfer to a plate cover loosely with foil and rest for 5 minutes.
- Step 4:
- Meanwhile make the mint sauce In a bowl combine mint, parsley, shallot, red wine vinegar, and honey. Drizzle in olive oil while stirring. Season with salt and pepper to taste.
- Step 5:
- Serve lamb chops warm, drizzled with rustic mint sauce. Garnish with extra mint if desired.
