# Steps:

01 - Combine the sliced strawberries, thinly sliced chili, lime juice and agave syrup in a mixing glass or pitcher. Use a muddler or the back of a spoon to press until the strawberries release their juices and the chili softens, about 30–60 seconds.
02 - Pour the muddled contents through a fine mesh sieve into a clean jug, pressing on the solids to extract as much liquid as possible. Discard the solids or reserve a spoonful for texture if preferred.
03 - Fill two serving glasses with ice. Divide the strained strawberry-lime-chili concentrate evenly between the glasses.
04 - Pour the chilled sparkling water over each glass and stir gently once or twice to integrate the flavors without flattening the bubbles.
05 - Finish with lime wheels, strawberry slices and mint sprigs; rim with chili flakes if desired. Taste and adjust spice or sweetness to preference.
